Ingredients for 4 servings:

  • 400 g potatoes
  • 2 rolls
  • 375 ml milk
  • 2 eggs
  • 50 g bacon
  • Butter, for spreading

This old recipe comes from Hesse and was eaten for Vespers

Cook the potatoes in their skins, peel them, and press them through a potato ricer. Soak the bread rolls in milk, break them up, press them thoroughly, and keep them warm. Then mix the soaked rolls with the mashed potatoes and the eggs and knead into a dough. Season with salt. Grease a baking tray with the bacon, drop the dough into small flatbreads by the tablespoon, and bake for 20 minutes at 200°C (400°F). Brush the hot Schepperlinge with butter and eat immediately, as this is when they taste best. Serve with hot coffee.
