Scotch Eggs

Ingredients for 4 servings:

  • 10 eggs
  • 1 m.-sized onion(s)
  • 500 g minced meat, mixed
  • 100 g breadcrumbs
  • Salt and pepper, white
  • 1 tsp mustard, medium hot
  • 3 tbsp flour
  • 1 kg fat for frying

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

Eggs in minced meat

Boil 8 hard-boiled eggs for about 10 minutes. Then rinse with cold water, peel, and let cool. Peel and finely chop the onions. Knead together the minced meat, onions, 3 tablespoons of breadcrumbs, and 1 egg. Season with salt, pepper, and mustard. Coat the hard-boiled eggs thinly in the meat mixture. Beat the last egg. Coat the coated eggs first in flour, then in the egg, and then in the remaining breadcrumbs. Heat fat in a deep saucepan or deep fryer to 180°C. Fry the eggs in batches for 6-8 minutes until golden brown. Drain on kitchen paper and let cool.
