Ingredients for 3 servings:
- 250 g flour
- 85 ml water
- 1 m.-sized egg(s)
- 5 g salt
- 10 drops of spice mix (Kansui)
- Flour , for editing

Homemade ramen noodles
Sift flour into a bowl. Mix water and kansui. Kansui is needed to give the noodles their typical color and special flavor. Add salt and dissolve it in the water. Add the egg and mix everything well. Gradually add the liquid to the flour and knead until a smooth dough is formed. Roll out your dough on a floured surface until 3 mm thick. Then dust the top of the dough well with flour. Now fold the right half of the dough onto the left. Then fold the top edge onto the bottom edge twice. Using a sharp, long knife, cut strips about 3 mm wide. Unfold these and spread them out on a lightly floured towel. Let them dry for about 10 minutes. Then process them further. These noodles cook for about 3 minutes. Kansui is the name given to water that is particularly rich in potassium and sodium carbonate and is usually artificially produced. It is available in many Asian stores in 100 ml or 500 ml bottles.
