Orange-lime curd

Ingredients for 1 servings:

  • 1 large orange(s), organic
  • 4 limes, organic
  • 125 g butter
  • 250 g sugar
  • 4 eggs

classic English spread, super delicious!

Wash and dry the orange and limes in hot water. Grate the zest and squeeze out the juice. Place the butter, zest, juice, and sugar in a metal bowl and heat gently over a pan of simmering water, stirring until the sugar and butter have dissolved. Meanwhile, whisk the eggs in a bowl and add to the orange and lime mixture. Cook over low heat, stirring constantly, for about 20-25 minutes. When the mixture is thicker and creamy, rinse the jars in hot water and pour in the cream. Seal immediately and allow to cool. Once opened, store in the refrigerator. This curd makes enough for two 250 ml jars.
