Grilled bifteki skewers

Ingredients for 3 servings:

  • 500 g minced lamb or other minced meat
  • 1 large onion(s)
  • 2 garlic cloves
  • 1 tbsp gyro seasoning
  • a few stalks of flat-leaf parsley
  • breadcrumbs
  • salt and pepper
  • 100 g sheep’s cheese, e.g. feta cheese
  • 20 slices of bacon

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour

First, I’d like to briefly note that I get my minced lamb directly from the farmer. Since the meat here is very coarse, I have to grind it again. I add all the ingredients, except for the breadcrumbs, feta cheese, and bacon, to the grinder and grind them all through. If you don’t want to or can’t do that, you can finely chop the onion, garlic, and parsley and mix them with the minced meat. Then add the breadcrumbs to create a relatively dry meat mixture. Finely crumble the feta cheese and carefully mix it into the minced meat mixture. Then form the minced meat into balls and wrap each one in a slice of bacon. Thread 4-5 balls onto a skewer. Grill the skewers indirectly first and then directly; this takes about 20 minutes.
