Ingredients for 1 servings:

  • 150 g butter
  • 175 g cane sugar
  • 250 g flour
  • 1 ½ tsp baking powder
  • 250 ml tea (Earl Grey)
  • 250 g apricot(s), dried
  • 1 egg(s)
  • 1 handful of walnuts
  • 1 pck. lemon peel, or freshly grated from an untreated lemon

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Very fruity and easy to prepare! Let it rest for 1-2 days! Serves 6 pieces

Bring the butter, sugar, tea, and chopped dried fruit to a boil in a saucepan, simmer for 5 minutes, and let cool. Add the flour and baking powder, then gradually add the beaten egg, walnuts, and lemon zest. Pour the batter into a greased loaf pan lined with baking paper. Bake in a preheated oven at 180°C for 70 minutes. After about 15 minutes in the oven, slice the cake lengthwise. Let the cake rest for 1-2 days; then it will be well-cured and easy to slice.
