Beef and Guinness Stew

Ingredients for 4 servings:

  • 500 g beef, diced
  • 1 tbsp flour
  • 500 ml strong beer (Guinness or other stout e.g. Beamish)
  • 3 m.-sized carrot(s), cut into coarse slices
  • 2 stalk(s) Celery, roughly chopped
  • 1 large onion(s), roughly diced
  • 1 sprig rosemary, fresh
  • 1 sprig thyme, fresh
  • 1 pinch(s) of sugar
  • salt and pepper
  • cream

Beef stew with Guinness beer

Preheat the oven to 120 degrees Celsius (250 degrees Fahrenheit). Pat the meat dry, then place it in a roasting pan or a sufficiently large casserole dish with a lid. Dust with flour and mix well. Add the finely chopped vegetables, herbs, and a pinch of sugar. Season with salt and pepper, then pour the beer over everything. Stir gently to ensure all ingredients are covered. If there is too much liquid, simply add a little water. Put the lid on and place the roasting pan in the oven for 2 to 3 hours. The cooking time depends on the meat; after 2 hours, simply test whether it is cooked. The stew is ready when the meat falls apart. Finally, stir in a little cream, if desired, and season with salt and pepper. Serve with mashed potatoes or boiled potatoes.
