Ingredients for 4 servings:

  • 500 g tomatoes
  • 1 cucumber(s)
  • 2 bell peppers
  • 2 medium onions
  • 150 g feta cheese
  • 4 tbsp black olives
  • 3 eggs, hard-boiled
  • 4 anchovy fillets
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • ½ tsp oregano, grated
  • black pepper
  • Salt
  • Sugar

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Score the tomatoes crosswise, blanch them, and cut into eighths. Wash the cucumber and slice it unpeeled. Cut the bell peppers in half, remove the seeds and membranes, and cut into thin strips. Peel the onions and slice very thinly. Dice the cheese. Peel the eggs and cut them into eighths. Dice the anchovies. Carefully mix all ingredients together. Combine the sauce ingredients and season to taste, then pour over the salad. Serve in a large bowl.
