Ingredients for 4 servings:
- 500 g feta cheese
- 200 g cheese, kefalotiri or other hard cheese
- 6 eggs
- 4 tbsp butter
- 1 tomato(s)

Omelette with tomato sauce
Cut the cheese into approximately 1 cm thick slices. Whisk the eggs in a bowl. Heat the butter in a pan and fry the cheese until golden brown. Pour the egg mixture and the chopped tomato over the cheese and let it set over low heat, stirring the mixture with a fork. Cook the omelet until golden brown on both sides. Flip the omelet using a plate. This goes well with a green or Greek salad.
