Ingredients for 4 servings:

  • 900 g chicken breast fillet(s)
  • 8 tomatoes
  • 4 onions
  • 250g mozzarella
  • 2 tbsp oil
  • salt and pepper
  • Basil, dried

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Wash the chicken breast fillet, pat dry with a paper towel, and halve each piece. Season with salt and pepper. Chop the onions and fry in a pan with a little olive oil. Meanwhile, wash and slice the tomatoes. Brush a baking dish with olive oil. Fan out the tomato slices. Season with salt and pepper and sprinkle with the dried basil. Add a little more salt, as the tomatoes release a lot of water when baked. Spread the fried onions evenly over the seasoned tomato slices. Brown the chicken in a pan with a little olive oil. Do not cook thoroughly, as the chicken will continue to cook in the oven. Place the browned chicken on top of the onions and tomatoes. Slice the mozzarella and spread it over the chicken breast fillet. Sprinkle with some basil to finish. Bake the dish for 45 minutes on the middle rack of the oven at approximately 220 degrees Celsius. Serve with rice, pasta, baguette, or ciabatta.
