Fried mozzarella in Parma ham

Ingredients for 4 servings:

  • 4 balls of mozzarella (preferably buffalo mozzarella)
  • 8 slices of Parma ham
  • pepper
  • 16 leaves of sage, small leaves
  • 2 tbsp mustard (fig mustard)
  • 2 tbsp Balsamic vinegar bianco
  • 3 tbsp olive oil
  • ½ bunch arugula
  • 1 tbsp butter

Working time approx. 25 minutes; Total time approx. 25 minutes

Pat the mozzarella dry and cut in half horizontally. Sprinkle each slice of ham with pepper and top with a sage leaf. Wrap each half of the mozzarella in the mixture. Mix together the mustard, vinegar, 1 tablespoon of water, and 1 tablespoon of oil. Season with a little pepper. Wash and trim the arugula and let it drain. Mix everything together. Heat 2 tablespoons of oil and butter. Fry the mozzarella parcels seam-side down for about 2 minutes. Then turn them over and cook for about 2 more minutes. Drain on kitchen paper. Briefly toss the remaining sage in the cooking fat. Serve the mozzarella parcels with the sage and arugula. Serve with baguette.
