Salsiccia alla Birra. A dish from Giulia.
Finely chop 1 onion and 1 garlic clove. Cut the sausages into bite-sized pieces. Heat 1 tablespoon of olive oil in a pan and fry the onion, garlic, and sausage until lightly browned. Sprinkle with 1 teaspoon of paprika and fry briefly. Deglaze with 0.2 liters of beer, add 1 teaspoon of tomato paste, and a sprig of rosemary. Season with salt and pepper, and simmer, covered, over low heat for about 40 minutes. Add a little more water if needed. Serve with polenta, mashed potatoes, or white bread.
