Cretan Schnitzel

Ingredients for 4 servings:

  • 250 g tomatoes
  • 100 g feta cheese
  • 60 g green olives, pitted
  • 1 bunch of thyme
  • 1 bunch rosemary
  • 1 tbsp oil
  • 4 pork schnitzels, each approx. 150 grams
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Slice the tomatoes and olives, crumble the cheese, and tear the thyme and rosemary from the stems. Brown the schnitzel in oil, season with salt and pepper, and place on a baking sheet. Top with the tomatoes, olives, cheese, and herbs, and season lightly with salt and pepper. Bake in a preheated oven at 200°C (top/bottom heat) (gas mark 3) for about 10 minutes.
