Ingredients for 6 servings:

  • 300 g baguette(s), cut into approx. 1.5 cm wide slices
  • 3 tbsp olive oil
  • 1 tbsp olive oil
  • 2 cloves garlic
  • 375 g zucchini
  • 1 bunch basil, finely chopped
  • 80 g Parmesan, grated
  • ¼ tsp salt
  • Pepper, from the mill

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Antipasto

Crostini: Place bread slices on a baking sheet lined with parchment paper and drizzle with oil. Toast in the center of an oven preheated to 240°C (475°F) for 5 minutes. Topping: Heat the oil in a pan. Sauté garlic, add zucchini, and continue to simmer uncovered for about 15 minutes, until the resulting liquid has completely evaporated. Let cool slightly. Add basil and Parmesan cheese, blend, and season. Brush the crostini with the zucchini and herb mixture.
