Ingredients for 3 servings:
- 500 g fresh or frozen berries, e.g. blackcurrants, raspberries or blackberries
- 150 g fructose
- 2 tbsp lemon juice
- 50 g apple syrup or pear syrup
- 3 tbsp apple pectin

Suitable for glycemic index diets
Rinse, drain, and sort fresh berries. Allow frozen berries to thaw slightly. Mix the pectin with the apple or pear syrup until lump-free. Bring the berries, fructose, and lemon juice to a boil while stirring, and simmer gently for about 3 minutes. Briefly remove the pan from the heat and stir in the pectin mixture. Bring back to a boil while stirring, and simmer thoroughly for about 1 minute. Immediately pour the hot jam into small, hot-rinsed jars and seal tightly with screw lids. Store the jam in a cool, dark place. Once opened, it will keep in the refrigerator for 3 to 4 weeks. Tip: Plums, apricots, or peaches are also suitable for this jam. This jam is suitable for a low-glycemic index diet.
