Pasta with tomato and herb sauce

Ingredients for 2 servings:

  • 50 g herbs, fresh, mixed, possibly frozen
  • 1 large onion(s)
  • 300 g cherry tomatoes
  • olive oil
  • salt and pepper
  • 200 g ricotta (or layered cheese)
  • 250g pasta

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Wash the herbs, shake dry, and roughly chop. Dice the onion and sauté in olive oil until translucent. Quarter the cherry tomatoes, add them to the onions, season with salt and pepper, and simmer for a few minutes. The sauce should have a slightly thickened consistency. Cook the pasta until al dente, drain, and set aside. Add the herbs to the sauce, let it simmer briefly, and season again to taste. Stir in the ricotta, add the pasta to the sauce, mix, and serve immediately. Serve with a leaf salad.
