Penne with feta and tomato sauce

Ingredients for 4 servings:

  • 4 spring onions, finely chopped
  • 5 tbsp extra virgin olive oil
  • 200 g feta cheese (or light version), diced or crumbled
  • 6 tbsp cheese, parmigiano reggiano or grana padano, freshly grated
  • 4 tomatoes, ripe OR:
  • Cherry tomatoes, comparable quantity OR:
  • 1 small can of tomatoes, chopped
  • 1 handful of basil, cut into strips
  • Salt and pepper, freshly ground
  • 500g penne

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

light, simple food, made very quickly

Boil water for the pasta, bring to a boil, add a pinch of salt, and add the penne. Gently heat the oil in a heavy pot or pan. Add the spring onions, feta, and half of the Parmesan or Grana Padano. Mix everything together and cook for about 1 minute. Stir in the tomatoes and basil and season with salt and pepper. Remove the sauce from the heat as soon as it’s warm and then toss it with the hot penne. Sprinkle the remaining grated cheese over the top.
