Italian tomato sauce with vegetables

Ingredients for 4 servings:

  • 1 can of tomatoes
  • 1 onion(s)
  • 2 cloves garlic
  • 1 carrot(s)
  • 1 zucchini
  • 1 bell pepper(s), yellow
  • 3 mushrooms
  • 2 tbsp tomato paste
  • 1 tsp sugar
  • some oregano
  • some basil
  • some thyme
  • some rosemary
  • some tarragon
  • salt and pepper
  • Olive oil, for frying
  • possibly cream

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Finely chop and dice all ingredients. First, sauté the onion, garlic, and carrot pieces in olive oil. Then add the tomato paste. Add the zucchini, bell peppers, and mushrooms. Continue adding the tomatoes and seasoning. Don’t forget the sugar! If you like, you can also refine the sauce with a little cream. Let the sauce simmer on low heat for about 1-2 hours.
