Ingredients for 4 servings:
- 8 slice(s) roast beef, cut into thin slices, approx. 0.3 cm thick
- 5 tbsp olive oil
- 1 tbsp thyme, fresh
- 1 tbsp rosemary, fresh
- 1 tbsp oregano, fresh
- Pepper, from the mill
- chili flakes
- Salt (fleur de sel)
Instructions
Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes
Mix the oil with pepper, chili flakes, and coarsely chopped herbs. Pour a thin layer of oil into a shallow, lidded bowl. Place the first slice of meat on top, then alternate layers of meat and oil. Finally, pour the remaining oil over the meat. Cover and marinate for about an hour. Heat the olive oil in a grill pan until very hot, then grill the slices of meat for about 1 minute on each side. Keep warm in the preheated oven. Season with fleur de sel before serving. Serve with a mixed salad and roasted potatoes, or a Greek salad and baguette. Drink suggestion: a soft red wine.
