Ingredients for 4 servings:
- 600 g zucchini
- 1 garlic clove(s)
- 1 bunch of parsley
- 4 tbsp olive oil, cold-pressed, extra virgin
- Salt and pepper, black from the mill
- oregano
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Trifoliate zucchini
Wash the zucchini, trim the ends, and thinly slice or grate the zucchini. Finely chop 1 garlic clove and 1 bunch of parsley. Briefly sauté the garlic and parsley in 4 tablespoons of olive oil, add the zucchini slices, season with salt, and cook over high heat for exactly 8 minutes, stirring frequently. Season with salt, pepper, and oregano. Note: If zucchini is cooked for longer than 8 minutes, it will take on a potato flavor.
