Pasta with peas and Parma ham

Ingredients for 4 servings:

  • 400 g pasta
  • 2 garlic cloves
  • Parsley, flat
  • 150 g Parma ham
  • 1 bunch of spring onions
  • 5 tbsp olive oil
  • 2 tbsp butter
  • 300 g peas, frozen
  • salt and pepper
  • Parmesan, grated

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Cook the pasta according to the package instructions until al dente. Meanwhile, clean the spring onions and slice into rings, mince the garlic, chop the parsley, and cut the ham into pieces. Heat 1 tablespoon of the oil in a pan, fry the ham until crispy, and remove. Heat the butter in the same pan. Sauté the spring onions and garlic. Add the peas and a little of the pasta water (at least 5 tablespoons) and season with salt and pepper. Simmer for about five minutes. Return the ham to the pan with the parsley and the remaining 4 tablespoons of oil. Drain the pasta, toss with the sauce, and serve with Parmesan cheese.
