Ingredients for 4 servings:
- 50 g butter
- 1 onion(s)
- 1 garlic clove(s)
- 2 small chili peppers (alternatively some Tabasco)
- 450 g tomatoes
- 200 ml vegetable stock
- 2 tbsp tomato paste
- 1 tsp sugar
- salt and pepper
Instructions
Working time approx. 45 minutes; Total time approx. 45 minutes
Finely chop the onion and crush the garlic. Sauté both in the butter until the onions are translucent. Dice the chili peppers and add them. Sauté everything for another 2 minutes. Peel the tomatoes, cut out the strands, and dice them. Add them to the onions, garlic, and chili cubes along with the vegetable stock. Reduce the heat and simmer for about 10 minutes. Puree the sauce in a food processor or through a sieve. Then return it to the pot. Add the tomato paste and sugar and season with salt and pepper. Heat the sauce briefly again to dissolve the paste (add more or less stock depending on the desired consistency). This goes well with all kinds of pasta.
