Ingredients for 4 servings:
- 400 g macaroni
- 4 tbsp olive oil
- Salt and pepper from the mill
- 6 bell peppers, red and green
- 1 stalk(s) Celery
- 3 figs, ripe
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes
For the sauce, halve the bell peppers, remove the stems and seeds. Also remove the white membranes, then wash the bell peppers and drain well. Trim, wash, and drain the celery. Cut both ingredients into fine cubes or strips. Heat olive oil in a pan, add the vegetables, and sauté for about 10 minutes. Stir occasionally, adding a little water if necessary. Season with salt and pepper. Peel the figs, cut into small pieces, and stir into the vegetable sauce. Keep the sauce warm. Cook the macaroni in plenty of salted water according to the package instructions until al dente, then pour into a sieve and drain well. Toss the macaroni with the fig sauce before serving.
