Lukewarm potato dressing

Ingredients for 4 servings:

  • 80 g potato(s), floury
  • 70 ml chicken broth
  • 1 tbsp vinegar (white wine vinegar)
  • 2 tbsp oil (sunflower oil)
  • 1 tbsp olive oil
  • Salt and pepper, white from the mill

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

excellent for lamb’s lettuce

Peel and chop the potatoes, and boil them in salted water until soft. Drain the water and press the potatoes through a sieve or press them through a potato ricer. Add the broth, vinegar, and oil, and mix well. Season with salt and pepper. Then pour the lukewarm potato dressing over the lamb’s lettuce. Top with crispy fried bacon cubes – and you have a delicious, addictive appetizer!
