Ingredients for 2 servings:
- 2 bananas, ripe
- 300 ml orange juice
- 1 tbsp butter
- 2 tbsp brown sugar
- 1 tbsp, leveled cornstarch
- 20 g raisins
- 20 g desiccated coconut
Instructions
Working time approx. 10 minutes; Total time approx. 10 minutes
Halve the bananas lengthwise and place them in a baking dish. Combine 250 ml of orange juice with the butter and sugar in a saucepan and bring to a boil, stirring for about 1 minute. Blend the cornstarch with 50 ml of orange juice until smooth and add to the mixture in the pan, stirring until thickened. Pour over the bananas. Sprinkle the raisins and coconut flakes over the mixture in the baking dish. Bake the baking dish in the oven at 175 °C (top/bottom heat) for about 25 minutes, until the coconut flakes are golden brown. Serve on plates and with cinnamon sugar or a scoop of chocolate or vanilla ice cream.
