Fruit casserole with cherries or pineapple

Ingredients for 3 servings:

  • 150 g flour
  • 1 pinch of salt
  • 100 g sugar
  • 300 ml milk
  • 3 eggs
  • ½ bottle flavoring (lemon flavor)
  • 1 vanilla pod(s), scraped
  • 40 g butter or margarine for greasing
  • 1 jar morello cherries OR:
  • 1 can pineapple, in pieces
  • possibly powdered sugar

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Preheat electric oven to approximately 175°C, gas mark 3. Grease a baking dish thickly with butter or margarine. Drain the cherries or pineapple; you won’t need the juice. Combine the flour with salt, sugar, and milk. Stir in the lemon flavoring, vanilla seeds, and eggs. The batter will remain very runny! Pour the batter into the baking dish and spread the drained cherries or pineapple evenly on top. Bake for approximately 40 minutes. Sprinkle with powdered sugar before serving, if desired. Serves 3 as a sweet main course or 6 as a warm dessert. The recipe can easily be doubled or tripled and tastes great cold, too.
