Lemon Madeleines

Ingredients for 1 servings:

  • 80 g butter
  • 2 eggs
  • 60 g sugar
  • 2 tbsp milk
  • 1 lemon(s), zest and juice
  • 130 g flour
  • 1 tsp baking powder

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 10 minutes; Total time approx. 2 hours 40 minutes

Melt the butter in the microwave and let it cool. Beat the eggs with the sugar until creamy. Add the lemon zest (to taste), lemon juice, and milk. Sift the flour and baking powder together and stir into the mixture. Finally, add the melted butter. Cover with plastic wrap and let it rest in the refrigerator for 2 hours—the longer the better. The beautiful bump on the madeleines is created by the heat shock of the cold dough in the hot oven. After the rest, preheat the oven to 240°C (top/bottom heat). Fill the madeleine molds three-quarters full. Reduce the oven temperature to 200°C (400°F). Bake the madeleines for 8-10 minutes. This yields approximately 12 madeleines, each with approximately 60 calories.
