Puff pastry sticks from Provence
Preheat oven to 200°C fan/convection oven. Roll out the puff pastry and cut in half to create two equal-sized sheets. Beat the egg with a few drops of water. Lightly brush one sheet of puff pastry. First sprinkle with a little sugar and then with half of the chocolate chips. Place the second sheet of puff pastry on top of the first and press down lightly. Brush this again thinly with egg and sprinkle with sugar and chocolate chips. Use a knife to cut the puff pastry into strips about 2 cm thick. If you want shorter sacristains, cut the pastry in half again crosswise from both ends. Twist the strips towards each other. Reduce the temperature to 180°C fan/convection oven. Place the puff pastry sticks on a baking sheet lined with baking paper and place on the middle rack of the oven. Bake for about 17 minutes, until golden brown. Sprinkle with powdered sugar and enjoy. This makes either 20 short or 10 long sacristains, depending on whether you divide the dough again. The original sacristains are filled with sugar and flaked almonds. However, on our trip, we ate them with chocolate and were blown away…
