Ingredients for 2 servings:
- 2 small goat cheeses, round
- 1 tsp olive oil
- 1 sprig(s) rosemary, finely chopped
- Pepper, mixed or black, coarse
- Honey or maple syrup
- Seasonal fruit (e.g. berries, peaches, pears, grapes, …)

as a starter, snack or dessert
Halve the thick goat’s cheese crosswise, if desired, to create two thinner slices. Place in small, ovenproof soufflé dishes (the cheese will spread slightly during baking, so a larger dish isn’t as good, but will work in a pinch). Drizzle with olive oil and sprinkle with rosemary and pepper. Place on the top rack of an oven preheated to 220°C (grill setting or top heat). The cheese is ready when the surface is bubbling and lightly browned. Serve with honey and fruit. As an appetizer, garnish with fresh white bread, toasted pine nuts, and arugula, if desired.
