Wok-fried strips with spring onions

Ingredients for 4 servings:

  • 500 g chicken breast fillet(s) or pork fillet
  • 4 tbsp soy sauce
  • 1 tbsp sherry
  • 1 tbsp honey
  • 500 g bell pepper(s)
  • 600 g spring onions
  • 250 ml beef broth
  • 1 tbsp sambal oelek
  • 1 tbsp sauce thickener
  • oil

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Cut the fillet into strips and marinate in a mixture of soy sauce, sherry, and honey for about 30 minutes. Drain the meat well and reserve the marinade. Brown the meat in about 3 tablespoons of oil, remove, and keep warm. Finely chop the bell peppers and spring onions and fry in the oil. Add the marinade and stock, and simmer for 6-8 minutes. Then return the meat to the pan, heat through, and thicken the sauce slightly with the sauce thickener. Season to taste with salt and sambal oelek.
