Ingredients for 4 servings:
- 500 g chicken breast fillet(s)
- 400 ml coconut milk
- 400 g peach(s), without skin (canned)
- 400 g mango(s) (canned)
- 1 tsp vegetable broth powder
- 3 tsp curry powder
- salt and pepper
- Paprika powder, hot
- 200 g basmati
- Fat, for frying
Instructions
Working time approx. 25 minutes; Total time approx. 25 minutes
Fry the chicken breast fillets until golden brown. Deglaze the meat with the coconut milk and simmer slightly. Chop the mango and peaches and cook with the spices for about 10 minutes until the flavors blend. Cook the rice as a side dish, divide it between plates, and pour the sauce over it.
