Alsatian Madeleines

Ingredients for 1 servings:

  • 100 g flour
  • 100 g sugar
  • 100 g butter
  • 3 eggs
  • 1 sachet of vanilla sugar, or the pulp of a vanilla pod
  • some lemon juice

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Gently warm the butter and separate the eggs. Beat the egg whites with the vanilla sugar until stiff peaks form. Beat the egg yolks with the butter until fluffy. Add the egg whites, tablespoon at a time, to the egg/butter mixture, alternating with the finely sifted flour. Season with a few drops of lemon juice. Now pour the batter into flour-dusted madeleine molds and bake in a preheated oven at 200°C for about 10 minutes. If you don’t have madeleine molds, simply drop the batter in tablespoon-sized portions onto a baking sheet lined with aluminum foil.
