Vegan duck of true delicacy with mie noodles and vegetables

Ingredients for 4 servings:

  • 3 cans of mock duck (vegan mock duck), 280 g each, see tip
  • 200 g bell pepper(s), green and yellow
  • 200 g carrot(s)
  • 1 leek(s)
  • 150 g zucchini
  • 1 jar bamboo shoot(s), c. 175 g drained weight
  • 1 small piece(s) of ginger root
  • 2 garlic cloves
  • 250 ml vegetable stock
  • 250 g mie noodles
  • e.g. oil for frying and deep-frying
  • e.g. soy sauce

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Wash and trim the vegetables. Cut the bell peppers into strips, and the zucchini, leeks, and carrots into slices. Boil the carrots for 4-5 minutes, drain, and rinse in cold water. Crush the garlic and finely grate the ginger. Drain and rinse the bamboo shoots. Bring the vegetable stock to a boil. Set all ingredients aside. Prepare the mie noodles according to the package instructions. Fry the noodles in a wok or pan with a little oil. Carefully add soy sauce to give the noodles flavor and color. Always taste, otherwise it will quickly become too salty. When the noodles are done, set aside. In the same wok or pan, briefly fry the bell peppers with a little oil and add a little salt to retain the color. Add the remaining vegetables and fry everything briefly. Reduce the heat slightly and add the garlic and ginger. Stir-fry the noodles into the vegetables. Continue frying briefly. Add the vegetable stock, bring to a boil, and simmer on low heat for a few minutes to allow any browning to separate from the bottom of the wok/pan. While cooking the vegetables, add the mock duck, drain, pat dry, and fry in a deep fryer, wok, or pan at 180°C for about 15 minutes. When serving, add soy sauce, sambal oelek, or wasabi to taste. The vegetables can be added or substituted according to taste. Broccoli, mushrooms, onions, etc. are also great. The noodles can also be swapped for cooked rice. Tip: Mock duck is available at good Asian shops or online. Mock duck is a gluten-based meat substitute. It consists of wheat gluten, oil, sugar, soy sauce, and salt and is rich in protein. Its distinctive flavor and artificial “plucked duck” texture distinguish it from other commercially available gluten products.
