Apple and curd pancakes

Ingredients for 1 servings:

  • 5 tbsp flour (preferably spelt flour)
  • ½ pack of pudding powder (vanilla)
  • 1 jar milk, more if needed
  • 2 eggs
  • 1 packet of vanilla sugar (or the pulp of a vanilla pod)
  • 1 tbsp honey
  • 1 tbsp curd
  • 3 apples

Working time approx. 10 minutes; Total time approx. 10 minutes

Combine the flour, pudding powder, and vanilla sugar in a bowl. Beat in the two eggs. Mix with the milk until a smooth batter forms (not too runny, not too thick—thin with a little more milk if needed). Then add the honey and quark and mix everything together. Peel the apples, cut them into small pieces, and fold them in. In a hot, nonstick pan, fry the batter in batches to make pancakes. Serve hot. Tip: This recipe can be adapted as desired. Instead of spelt flour, you can also use millet flour, which tastes very good too. Since it can be made completely sugar-free, it’s ideal for allergy sufferers.
