Sweet and sour pork fillet with fresh pineapple

Ingredients for 3 servings:

  • 400 g pork fillet(s)
  • 1 bunch of spring onions
  • 1 red bell pepper(s)
  • ½ cucumber(s)
  • 200 g pineapple, fresh, diced
  • 100 g soy sprouts
  • 1 tbsp tomato paste
  • 100 ml tomato juice
  • 4 tbsp chili sauce, sweet
  • 3 tbsp vinegar (white wine)
  • 2 tbsp honey (acacia), liquid
  • 4 tbsp soy sauce
  • 3 tbsp flour
  • Oil (peanut)

Working time approx. 30 minutes; Rest time approx. 1 day 6 hours; Total time approx. 1 day 6 hours 30 minutes

Cut the pork fillet into thin slices and marinate in the soy sauce for at least 30 minutes. For the sauce, whisk the tomato paste, tomato juice, chili sauce, vinegar, and honey until smooth. Quarter the cucumber, remove the seeds, and finely slice it. Cut the bell pepper into strips and the spring onion into approximately 1 cm pieces. Remove the meat from the marinade (reserve this), coat it in flour, and shake off any excess flour. Heat the oil in a wok until very hot, fry the meat in batches, and then remove it. Add the bell pepper, onion, and cucumber to the wok and stir-fry for about 3 minutes. Add the meat, pineapple, and sprouts and fry for another 2 minutes. Finally, stir in the tomato juice and the remaining marinade.
