Sweet and sour snow peas with roasted pork

Ingredients for 4 servings:

  • 500 g sugar snap peas, washed, possibly blanched for 1 minute
  • 500 g pork fillet(s), cut into very thin strips
  • 4 tbsp vinegar (red wine vinegar)
  • 4 tbsp tomato ketchup
  • 4 tbsp sugar
  • 2 pieces ginger, small, peeled, finely diced
  • 1 clove(s) garlic, peeled, finely diced
  • 4 tbsp oil
  • Salt

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Mix the vinegar, ketchup, and sugar. Heat the oil in a wok (or a frying pan), stir-fry the pork for 1 minute, then season with salt. Sprinkle the ginger and garlic cubes over the pork and fry for another minute over high heat. Then add the snow peas and fry for 2 minutes. Pour in the ketchup mixture, bring to a boil briefly, and serve immediately.
