Carsten's Date – Ginger – Cream with Kumquats

Ingredients for 2 servings:

  • 120 g date(s), dried
  • 3 cm ginger, fresh, peeled
  • Cream, as needed
  • 1 kumquat(s)
  • some water

Instructions

Working time approx. 25 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 25 minutes

Dessert that is not just sweet

Halve the dates, remove the stones, and simmer gently with a little water for 30 minutes, then let cool. Purée the fruit with the liquid and pass through a fine sieve. Peel and grate the ginger, and add it. Gradually stir in the cream and chill. It’s amazing how much cream the dates can thicken. Serve in glasses and top with thin slices of kumquat. The kumquat blends beautifully with the cream; it’s more than just a decoration.
