Ingredients for 3 servings:

  • 1 kg yogurt (3.5% fat or more)
  • 1 mango(s)
  • n. B. sugar
  • possibly raisins or almonds or fruits

Instructions

Place 1 kg of yogurt in a cloth and hang it up overnight, or place it in a sieve over a bowl. If you want to do it quickly, you can also twist the cloth (it needs to be extremely fine-meshed!) together at the top and press firmly until all the whey is out and the mixture is firm. Cut a mango into pieces, puree it, and stir it into the drained yogurt. Add sugar to taste. If you like, you can also stir in raisins, almond slivers, or pieces of fruit. Traditionally, however, none of these belong in the shrikhand. A fat content of at least 3.5% is important, as with a lower fat content, hardly any remains when draining. 1 kg of yogurt with a 3.5% fat content yields approximately 420 g of yogurt without whey.
