Ingredients for 2 servings:
- 2 tbsp oil (I use neutral rapeseed oil)
- 400 g pork, in pieces
- ½ tsp salt
- 1 tsp ginger (I use ginger powder)
- 1 chili pepper(s), red (from the jar, so it’s not TOO hot)
- pepper
- 3 dl water
- 1 carrot(s)
- ½ leek
- 2 bell peppers, red
- 1 can/n pineapple, (approx. 4 pineapple rings)
- 200 g bamboo slices, cut into strips
- 1 dl pineapple juice
- 2 tbsp soy sauce
- 2 tbsp vinegar (white wine vinegar)
- 1 tbsp sugar
- 2 tsp potato flour
- Honey
- Rice (Basmati)
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Cut the meat into small pieces, season with pepper and salt, and fry. Then add water and the chopped chili pepper (I leave out the seeds) and simmer for 15 minutes. Chop the carrot, leek, and bell pepper, add them along with the bamboo shoots and pineapple pieces, and simmer for another 10 minutes. For the sauce, mix the pineapple juice, soy sauce, white wine vinegar, sugar, potato flour, and a teaspoon of honey until the sugar dissolves, then simmer for another 5 minutes. Served with basmati rice, this is a delicious meal!
