Ingredients for 3 servings:
- 6 m.-sized onion(s), cut into half rings
- 6 large red bell peppers, cleaned and diced
- 3 large tomatoes, ripe or 1 can pizza tomatoes
- e.g. basil
- oil
- salt and pepper

Place the tomatoes in boiling water for about 30 seconds, rinse, peel, and dice. Fry the onions in a little hot oil until translucent. Then add the diced bell peppers and fry them. Add the tomatoes and let everything simmer gently for 15 minutes over low heat. Finally, season the vegetables with salt, pepper, and basil. The vegetables are served over cooked rice and with roasted meat dishes. Some people vary the recipe by stirring the cooked rice into the sauce, but it looks nicer served over the rice.
