Cranberry-Macadamia cookies with white chocolate

Ingredients for 1 servings:

  • 375 g wheat flour
  • ¾ tsp baking soda
  • ¾ tsp salt
  • 150 g white sugar
  • 220 g brown sugar
  • 225 g butter, soft
  • 2 eggs
  • 1 tbsp vanilla flavor
  • 225 g white chocolate coating OR vanilla chocolate coating (chips)
  • 135 g macadamia nuts, chopped
  • 120 g cranberries, dried

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Preheat the oven to 175°C (350°F). In a large bowl, combine the sifted flour with the baking soda and salt. Cream the white and brown sugars with the butter until fluffy. Add the eggs and vanilla extract. Then, a tablespoon at a time, stir in the flour. Finally, fold in the chocolate chips, chopped macadamia nuts, and cranberries. Drop the mixture in portions with a teaspoon onto a baking sheet lined with parchment paper and bake for about 10 minutes. Then, cool on a wire rack.
