Apple Crumble Muffins

Ingredients for 14 servings:

  • 65 g hazelnuts, chopped
  • 30 g flour
  • 3 tsp brown sugar
  • 2 tsp butter, soft
  • 2 tsp cinnamon
  • 180 g flour
  • 100 g sugar
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp baking soda
  • 1 pinch of salt
  • 2 eggs
  • 1 cup of sour cream (approx. 200 g)
  • 120 g butter
  • 200 g apples, diced

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Combine the crumble ingredients (up to the cinnamon) with a dough hook, kneading with your hands if necessary. Combine all ingredients, from flour to salt, and sift into a mixing bowl. In another bowl, whisk together the eggs, sour cream, and butter. First fold in the apples, then fold in the flour mixture until all ingredients are moistened. Line a muffin tin with baking cups and fill with batter. Bake at 190°C for about 20-25 minutes. TIP: The muffins are very difficult to remove from the muffin tin, so be sure to use baking cups!
