Ingredients for 1 servings:

  • 6 apples
  • 210 ml apple juice
  • 2 tbsp cornstarch
  • 150 g sugar
  • Cinnamon
  • 250 g flour
  • 240 g butter, cold, diced
  • 1 tsp salt
  • 8 tbsp water, cold
  • Fat for the mold

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Peel, quarter, and slice the apples. Bring the apple slices to a boil with 180 ml of apple juice and sugar. Mix the cornstarch with the remaining apple juice and add to the apple mixture. Cook until thickened. Add a little cinnamon and let cool slightly. Knead the flour, salt, and diced butter into a dough with as much cold water as needed (between 6 and 8 tablespoons). You can certainly sweeten the dough a bit. Grease a pie dish or springform pan and press two-thirds of the dough into it to form a rimmed base. Pour in the apple filling. Roll out the remaining dough and place it on top of the filling to form a lid. Press the edges together firmly. If you can’t cover the entire thing without making holes, it won’t affect the flavor. Bake in a preheated oven at 200°C for about 40-45 minutes. Tip: The cake tastes especially good served warm with vanilla ice cream.
