Ingredients for 1 servings:
- 1 portion of puff pastry for rolling out
- 8 slices of goat’s cheese
- ½ onion(s)
- 2 garlic cloves, finely chopped
- 1 can of tomatoes, peeled and chopped
- olive oil
- Herbs of Provence
- Fat for the mold
Instructions
Working time approx. 25 minutes; Total time approx. 25 minutes
Peel and chop half an onion, and sauté in olive oil. Add the chopped peeled tomatoes along with some of the liquid (less than the entire amount, otherwise there will be too much liquid and the tart will become soggy). Then add the finely chopped garlic cloves and simmer for about 15 minutes. In the meantime, line a greased tart tin with the puff pastry and bake in a preheated oven at 180°C for about 10 minutes. Then spread the tomato sauce and goat cheese slices on top. Sprinkle with Provençal herbs and return to the oven for another 15 minutes on the bottom rack. Serve immediately.
