the Christmas classic from Oregon

Peel the apples and remove the cores using a corer. Rub the apples thoroughly with lemon juice, inside and out, to prevent them from browning. Put half of the sugar in a bowl and mix with the ground almonds and cinnamon powder. Melt 3/4 of the butter and brush it over the apples. Then roll the apples in the almond mixture, pressing down to completely coat the fruit. Place the apples in a baking dish. Mix the remaining sugar with the remaining butter and raisins and fill the apples with the mixture. Finally, place a cinnamon stick in the center of each apple. Melt the remaining butter and drizzle it over the filled apples. Pour the apple juice into the dish and place the dish in a preheated oven (180°C) and bake for about 1 hour. Serve the baked apples hot.
