Salad with kohlrabi, cucumber and peppers

Ingredients for 5 servings:

  • 3 m.-large kohlrabi
  • 1 apple, sweet and juicy
  • ½ cucumber(s)
  • 1 red bell pepper(s)
  • ¼ Chinese cabbage
  • 1 celeriac
  • 4 tbsp oil
  • 1 tbsp lemon juice
  • 1 tbsp vinegar (white wine vinegar)
  • Sugar
  • Salt
  • pepper

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Peel the kohlrabi and apple and grate them into a bowl. Finely slice the cucumber, bell pepper, Chinese cabbage, and celery – or even better, finely grate them – and mix everything together. For the dressing, whisk together the oil, lemon juice, and vinegar and season generously with sugar, salt, and pepper. Add the dressing to the salad and mix. The salad tastes even better the next day when refrigerated.
