Ingredients for 4 servings:

  • 500 g flour
  • 4 eggs
  • 1 tbsp salt
  • 10 tbsp water, cold
  • Flour for the work surface
  • 1 jar plum jam
  • 1 egg white
  • salt water
  • 80 g butter
  • 80 g breadcrumbs
  • 80 g sugar

Instructions

Working time approx. 40 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 40 minutes

Hungarian pastry

Put the flour in a bowl. Make a well in the center. Add the eggs, salt, and water. First mix the ingredients, then knead into a smooth dough. Roll out on a floured surface to about 1 mm thick. Cut into 4 x 8 cm rectangles. Place small dollops of plum jam on one half with a teaspoon. Brush the edges with egg white. Cover with the remaining rectangles. Lightly press the edges of the dough around the jam. Let rest for 30 minutes. Bring a large pot of salted water to a boil. Add the dumplings. Simmer over low heat until they rise to the surface. Then cook for another 10 minutes. Remove with a slotted spoon and place in a sieve. Cool briefly and drain well. Heat the butter in a pan and toast the breadcrumbs for 3 minutes. Toss the plum dumplings in the breadcrumbs. Sprinkle with sugar and serve.
