Banana Loaf Bread

Ingredients for 1 servings:

  • 125 g flour
  • 100 g flour (wholemeal flour)
  • 165 g brown sugar
  • 1 tsp baking powder
  • ½ tsp cinnamon powder
  • ½ tsp nutmeg
  • 1 pinch of salt
  • 2 large bananas, fully ripe, mashed
  • 180 ml orange juice
  • 2 eggs, whisked
  • 4 tbsp vegetable oil

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 20 minutes

Preheat oven to 175 degrees Celsius (350 degrees Fahrenheit), bottom heat if possible, otherwise top/bottom heat. Lightly grease a loaf pan (20 x 12 x 7 cm) and line with baking paper. In a bowl, combine both flours, sugar, baking powder, spices, and salt. Set aside. In another bowl, combine the mashed bananas with the orange juice, then add the eggs and oil and mix. Add this mixture to the dry ingredients and mix everything thoroughly. Pour the batter into the prepared loaf pan and place the pan in the oven. Bake for 60 minutes. Do the skewer test (if a skewer inserted into the center comes out clean, the cake is done). Remove the cake from the oven and let it cool in the pan. Then remove from the pan, slice, and serve.
