Ingredients for 6 servings:
- 250 g white chocolate
- 125 g sugar
- ½ pack flavoring (lemon peel flavoring)
- 2 egg yolks
- 2 eggs
- 350 ml red wine (preferably Cabernet Sauvignon)
- 6 sheets of red gelatin
- 250 ml cream
- Fruit according to season and choice
- Mint for decoration

Melt the chocolate in a double boiler. Whisk the sugar, eggs, egg yolks, and lemon zest flavoring until white and foamy. Now, while still in the double boiler, gradually stir the melted chocolate into the egg and sugar mixture. Prepare the red gelatin according to the package instructions. Add it and remove the mixture from the hot water bath. Transfer the cream to a large bowl and slowly stir in the red wine. Place the now fairly liquid cream in the refrigerator for 1-2 hours. When it begins to set, whip the cream until stiff peaks form and carefully fold it in. Using a funnel, pour the mixture into 6 dessert glasses (I use martini glasses so you have an idea of the size). The red wine mousse now needs to chill for 3-4 hours (or overnight if you prefer). Use a vegetable peeler to shave curls from the remaining chocolate and sprinkle them over the mousse. Garnish with seasonal fruit of your choice (e.g., berries, physalis, etc.) and mint, and serve.
