Ingredients for 4 servings:

- 4 m.-large zucchini, grated
- 2 garlic cloves, crushed
- 1 liter vegetable broth
- 60 ml cream or milk
- salt and pepper

Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Peel and finely chop the onion, then sauté it in melted butter in a medium saucepan. Add the grated zucchini and crushed garlic cloves and cook for about 2-3 minutes, stirring, until softened. Then pour in the vegetable stock and bring to a boil. Reduce the heat slightly and simmer uncovered for 10 minutes. Stir in the cream or milk and season with salt and pepper. Serve immediately.
